How to clean an oven with baking soda, overnight

Mix about half a cup of baking soda with just enough water to make a spreadable paste, coat the cool oven interior while avoiding the heating elements, and leave it overnight — eight to twelve hours. Wipe the loosened grime out with a damp cloth, mist stubborn white residue with vinegar so it fizzes loose, wipe again, and dry.

Why baking soda needs the whole night

Oven grime is grease and sugars that heat has hardened into a varnish. Baking soda works on it two ways: as a mild alkali that slowly breaks down grease, and as a gentle abrasive when you wipe. “Mild” and “slowly” are the honest words in that sentence — it is safe chemistry precisely because it is weak chemistry, and weak chemistry pays for its safety with time. Give the paste twenty minutes and you will conclude baking soda is a myth; give it a night and you will wipe out brown sludge that was baked-on armor the evening before. The practical routine:

1. Evening: remove the racks and anything else loose. Spread the paste on the floor, walls and ceiling of a completely cool oven, skipping the heating elements and the fan opening. It will turn brown almost immediately — that is the point.
2. Same evening: put the racks in the sink (or the tub, lined with a towel to prevent scratches) with hot water and dish soap to soak overnight.
3. Morning: wipe everything out with a damp cloth, rinsing the cloth often. Where dried paste clings, a light mist of vinegar makes it foam and lift — this is the one place the famous baking-soda-and-vinegar pairing earns its keep: the fizz is for lifting residue, not extra cleaning power. Scrub the racks, rinse, dry, reassemble.
4. Run the empty oven at low heat for ten minutes; any leftover streaks show up as white haze you can wipe once it cools.

For the door glass, the same paste needs only twenty or thirty minutes before wiping. Do not let paste or liquid seep into the vent slots at the bottom edge of the door — drips that get between the panes can only be removed by disassembling the door.

What the paste will not fix

Carbon that has gone black and crusted — the meteorite under the broiler after a year of roasting — is past what a mild alkali does in one night. You can repeat the treatment, use a commercial oven cleaner exactly as its label directs (the label is the only honest source for what a product does, and ventilation instructions are part of the dose), or use the self-clean cycle if your manual allows it, with the manual’s own cautions. It is not wrong here — but it is the reason the cold overnight method has extra fans in South Florida.
